I feel as though I have been embroiled in an ongoing beef with vegetables my entire life. Growing up I never particularly cared for them outside of the "good vegetables", in my family that usually meant the ones heavily seasoned with copious amounts of meat. I didn't know any vegans growing up and my only relationship with raw greens was in salads whichI loathed. As I got older I started to realize they weren't so bad I had just been introduced to them in the wrong way. Now as an adult I take in my vegan moments and am always seeking inventive ways to make my raw veggies flavorful.

 

 

On a recent trip to CODA Atlanta, Atlanta's premier food hall I stopped at new sandwich outpost Humble Mumble and decided to give their spin on the veggie sandwich a go. This sandwich shop is known for their heavy handed grinders but this vegan option I found to be quite sturdy. Served with some delicious house made chips you can't go wrong.
